Western Bean Stew

Recipe Introduction
This version uses the Crock-pot, however, I have also prepared this Stew on the stove-top using a covered dutch oven.
List of Ingredients
2 cups (1 pound) dried pinto beans
1 ham hock
1 teaspoon salt
1/4 teaspoon hot pepper sauce
1/4 cup bacon fat
1 large onion, chopped
2 chopped garlic cloves
1 can (14.5 oz) whole tomatoes, chopped
1/4 cup fresh parsley, minced or....
1 tablespoon dried parsley
1/2 teaspoon ground (or flake) marjoram
1 tablespoon chili powder or more to taste
Recipe
1. Sort and wash dried beans.
2. In a deep kettle, soak beans overnight in cold water to cover.
3. The next day, place soaked beans and water in a crock-pot. Add ham hock and hot pepper.
4. In a large skillet, heat bacon. Add onion and garlic and cook until almost golden.
5. Remove one cup of bean liquid and mix with tomatoes, parsley, marjoram and chili powder. Pour into skillet with onion and garlic and blend together until heated.
6. Pour skillet mixture back into crock-pot and stir.
7. Cook two hours on High or cook for six to eight hours on Low or until beans are tender.
8. Add salt and stir.
