Cashew Pork with Snow Peas

1 cup chicken broth
1/4 cup cooking sherry
1/4 cup soy sauce
3 Tablespoons cornstarch, divided
1 (1 lb.) pork tenderloin, trimmed
3 Tablespoons canola oil, divided
8 ounces snow peas, strings removed
2 cloves garlic, minced
1/2 cup chopped cashews
Recipe
Whisk broth, sherry, soy sauce and 1 Tablespoon cornstarch together in a bowl until no lumps remain; set aside. Cut pork crosswise into 1/2 inch slices, then cut each slice into 1/2 inch thick strips. Toss pork and 2 Tablespoon oil in a large bowl. Add remaining 2 Tablespoons of cornstarch and toss to coat. Heat 2 teaspoons oil in large skillet over medium-high heat until just smoking. Brown half of pork, about 3-5 minutes. Transfer pork to a plate and cover with foil. Repeat with 2 teaspoons oil and remaining pork.
Add snow peas and remaining 2 teaspoons oil ti empty skillet. Cook until bright green, about 1 minute. Add garlic and cook for 30 seconds. Whisk broth mixture to recombine and add to skillet. Cook until thickened, about 2 minutes. Return pork and any accumulated pan juices to skillet, add cashews and cook until heated through, about 1 minute. Serve with rice.
