Louisiana CAJUN MAGIC Cookbook (Chef Paul Prudhomme's)
Recipe Introduction
This recipe is for baking in your oven but for a real treat try grilling this in your covered charcoal grill/smoker with a few hickory chips. I use a wire meatloaf basket especially for this occasion.
List of Ingredients
4 tablespoons unsalted butter
3/4 cup finely chopped onion
1/2 cup finely chopped celery
1/2 cup finely chopped green bell pepper
1/4 cup finely chopped green onions
2 tablespoons plus 1/2 teaspoon CAJUN MAGIC Meat Magic, (see note)
1 tablespoon Worcestershire sauce
2 teaspoons minced garlic
2 bay leaves
1/2 cup evaporated milk
1/2 cup ketchup
1 1/2 pounds ground beef
1/2 pound ground pork
2 large eggs, lightly beaten
1 cup very fine dry bread crumbs
Recipe
Preheat oven to 350 degrees F. Melt butter in 1 quart saucepan over medium heat. Add onion, celery, bell pepper, green onions, MEAT MAGIC, Worcestershire sauce, garlic and bay leaves. Saute until mixture starts sticking excessively, about 6 minutes, stirring occasionally and scraping pan bottom well. Stir in milk and ketchup. Cook about 2 minutes, stirring occasionally. Cool to room tempterature. Discard bay leaves.
Place ground beef and pork in ungreased 13 X 9 inch baking pan. Add eggs, cooked vegetable mixture and bread crumbs. Mix well until thoroughly combined. In center of pan, shape mixture into loaf that is about 1 1/2 inches high, 6 inches wide and 12 inches long. Bake, uncovered, 25 minutes, then increase heat to 400 degrees F and cook until done, about 35 minutes longer. Serve immediately.
