Old-Fashioned Macaroni and Cheese
List of Ingredients
2 cups (8 ounces) dried elbow macaroni, cooked
3/4 cup chopped yellow onions, divided
3 cups (12 ounces) shredded Cheddar cheese, divided
2 large eggs, lightly beaten
1 1/2 cups half and half (or whole milk)
1 teaspoon dry mustard
3/4 teaspoon salt
1/4 teaspoon ground white pepper
Freshly ground black pepper (optional)
Recipe
1. Layer one-third of the cooked macaroni in a lightly greased 2 quart casserole dish; sprinkle with half of the chopped onions and then 1 cup of cheese. Repeat next layer with remaining chopped onions and next third of macaroni and 1 cup of cheese, ending the last layer with the last third of macaroni. Reserve remaining 1 cup of cheese for later.
2. In a bowl, combine eggs, half & half, (or milk), mustard, salt and pepper, stirring with a wire whisk or fork until blended. Pour egg mixture over macaroni. Cover with tin foil and bake at 350 degrees for 35 minutes.
3. Uncover and bake for another 10 minutes.
4. Sprinkle with remaining 1 cup of cheese. Return to oven until cheese melts, (about 5-10 minutes).
5. Sprinkle with freshly ground pepper, if desired, before serving.
