1 medium eggplant, cut into eight ¼” thick slices
1 egg, white
½ cup seasoned breadcrumbs
* ½ cup marinara sauce
½ cup shredded mozzarella cheese


Recipe



Lightly spray a wire rack with cooking spray and place inside baking pan. Dredge slices in egg white in shallow bowl; sprinkle with breadcrumbs and press firmly to cover. Spray both sides of slices with vegetable cooking spray and place on wire rack. Bake at 400 degrees for 15 minutes or until lightly brown. Remove pan from oven and top each slice with 2 tablespoon sauce and 2 tablespoon cheese. Bake until cheese melts, about 4 minutes

*try adding some cooked, crumbled sweet or hot Italian sausage to sauce.
