Eggplant Sticks with Dipping Sauce

Sticks:
1 medium eggplant, peeled and cut lengthwise into ½” thick slices
1 large egg
2 tablespoon milk
1 cup ground Ritz crackers
1 teaspoon salt
1/3 cup flour
Vegetable oil
Sauce:
1 tablespoon cornstarch
1 cup carrot juice
¼ teaspoon grated ginger
¼ teaspoon salt
Recipe
Cut slices into 1½x4 inch sticks. In bowl, beat together egg and milk. In another bowl, ;mix crackers and salt. Dust sticks with flour, dip in egg and them coat with crumbs. Pour ¼” deep oil in frying pan over medium high heat. Place batches of sticks in pan and cook, turning until all sides are browned, about 3-4 minutes.
In small bowl, combine cornstarch with 1 tablespoon water; set aside. In small saucepan, combine carrot juice, ginger and salt. Bring to a boil; whisk in cornstarch mixture, and boil 1 minute more. Serve wiwth sticks.
