    Recipe Introduction

Karen Marshall St. Louis Globe Democrat Food Editor The $900 dinner started with this appetizer, developed by Karen Marshall of the Globe Democrat..at a charity auction, the highest bidder anteed up $900 for a Dinner for Ten..Karen thought the generous host deserved something special.. Mix well in a bowl:
    2 cups shredded cooked chicken
4 oz can chopped green chilies, drained
4 large green onions, finely chopped
    1/3 cup grated Parmesan Cheese
dash each of garlic powder and onion powder
    pinch of salt..

use 1 tsp of mixture to fill wonton wrapper..

    Assemble like this:
Put spoonful of mix slightly below center of wrapper and fold bottom corner up. Fold sides in, points overlapping. Wet edges to seal. Fold final corner down, to resemble an envelope. Wet edges to seal. makes about 5 dozen. Deep fry a few at a time until golden and crispy around the edges. Drain on paper towels. Serve with sour cream or sweet-sour sauce..

To freeze for up to a month, spread uncooked wontons on cookie sheets in the freezer, when frozen, bag up in Ziplocs. Do NOT thaw before deep frying. Can be deep fried several hours ahead, just until lightly golden, drained and then reheated in a 400 degree oven for 5 to 10 minutes. Do NOT reheat in the microwave..
