    Biscuits: Bacon and Cheddar Drop Biscuits

    1/4 cup finely chopped onion
    4 slices bacon, crisply cooked and
    finely crumbled
    2 tablespoons shortening
    1-3/4 cups self-rising flour
    3/4 cup shredded Cheddar cheese
    2/3 cup milk

    Recipe

    Preheat oven to 425°F. Spray a baking sheet with non-stick vegetable spray.
    In a large skillet, cook onion in bacon drippings until softened.
    In a small bowl, combine onion mixture and bacon.
    In a large mixing bowl, cut shortening into flour until mixture resembles coarse crumbs. Stir in onion mixture and cheese; add milk, stirring until dough forms. Drop by rounded tablespoonfuls onto prepared baking sheet.
    Bake 15 to 20 minutes or until lightly browned.
