    Loaf Bread: Gardeners Bread

    Garden Club Special 2 fresh pears, grated [1 1/2 cups]...
    set aside in mixing bowl..

    1/2 cup grated unpeeled small zucchini
    1/3 cup finely grated carrot,..
    press out excess liquid in strainer

    in a separate bowl mix,..
    3 cups sifted flour
    1 tsp salt
    1 tsp baking soda
    3/4 tsp cinnamon
    1/4 tsp ground ginger
    grated fresh nutmeg
    1/4 tsp. baking powder

    to the grated veggies, add pears ,
    3 large beaten eggs
    1 1/2 cups sugar
    1 cup oil
    2 tsp vanilla
    1/2 tsp grated lemon peel....

    Blend in the dry mixture and fold in 1/2 cup chopped nuts.. Pour into 2 Pam-sprayed loaf pans[5x9]. Let stand 5 minutes on counter.... Bake at 350 degrees below center of oven for 55 to 60 minutes...remove to racks and cool for 10 minutes.. turn out of pans to cool on wire racks.. this freezes beautifully make sure to wrap in plastic wrap and then 2 in a Ziploc bag ..use within a month..
