Recipe Introduction
*NOTE: NEVER LEAVE UNATTENDED!
Many house fires have begun because of grease. If you should run into problems, turn off the burner. Have a lid handy, just in case, to snuff out any flames. Baking Soda is good for putting out grease fires, so have that handy as well. NEVER use water or any kind of liquid! This will only splatter and spread the grease. Having an Extinguisher in the kitchen is always a good idea. Be safety
List of Ingredients
2 cups flour
2 tbsp sugar
2 tsp cream of tartar
1 tsp baking soda
1/2 tsp salt
1/4 cup butter
1 egg
2/3 cup milk
For Cheese Scones add:
1/2 cup grated cheese to dry ingredients
Recipe
Sift dry ingredients, cut in butter. Stir in grated cheese. Beat egg with the milk and combine with dry ingredients, stirring lightly. Turn onto floured board, knead lightly 10 times. Roll out 1/2-3/4" thick and cut into rounds. Place on an ungreased cookie sheet and bake for 10-15 minutes in a hot oven 450°F. Yields about 12.
To Deep Fry:
Have the Scones ready for baking. Fill a large pot or your deep fryer, 1/2 full or less with Canola Oil. Using Medium heat drop a small piece of dough into the pot and when it sizzles or bubbles the oil is ready.
Place about 6-10 of the rounds into the oil, turning often. They brown quickly, so be watchful! They're usually cooked within about 3-4 minutes. Drain on paper towel and serve hot.
