Recipe Introduction
This is a torte recipe I have been making since 1962. Although it does not contain chocolate, raspberry or orange it is an all time favorite. It looks real fancy and when presented it would appear you spent the day in the kitchen making it.... not so but you can keep that little secret to yourself. tee-hee! My oldest daughter had once made this for a gathering of friends and she had quite a time convincing the ladies that she had indeed made it herself and that no fancy bakery had prepared it for her. Needless to say everyone enjoyed her/mom's Swedish Torte.
List of Ingredients
1/2 cup butter (no substitutes please)
1/2 cup sugar
4 eggs; separated yolks and whites
3 Tbsps. milk
1 cup flour
1 tsp. baking powder
1/2 tsp. vanilla
1/4 tsp. salt
FILLING:
1/2 pt. heavy cream [whipped]
2 tbsps. sugar
1 pkg. frozen strawberries [drained]
1 large can sliced peaches [drained]
1/2 tsp. vanilla
Recipe
Fold fruit into whipped cream and vanilla mixture.
Cream butter and sugar. Add beaten egg yolks, milk, and flour sifted with dry ingredients. Mix well. Spread into two round layer pans; well buttered and floured.
Top with meringue made by beating 4 egg whites stiffly with 3/4 cup sugar and 1/4 tsp. baking powder.
Spread over batter and sprinkle with 1/4 cup sugar and 1/4 cup finely chopped nuts.
Bake 350 degrees for 35 minutes.
Cool and place one layer meringue side down and top with filling. Place the other layer on top and decorate with extra cream if desired. (I decorate the top with extra cream and also reserve a few slices of strawberries and peaches to place on top for a pretty presentation.)
