Mom's Maple Walnut Cake

Combine the following:
1 1/2 cups granulated sugar
1/4 cup Crisco
1 stick margarine, no lo fat
3 whole eggs
1/2 cup milk
1/2 tsp salt
1 tsp vanilla
1 tsp Mapleine or other maple flavoring
Beat the above for two whole minutes on medium high speed. Add:
1 1/2 cups all purpose flour
1 cup walnuts, processed or chopped very fine
Reserve one tbsp walnuts out for frosting.
Beat the batter two more minutes.
Pour into a greased and floured large loaf pan and bake at 350 degrees for appx 1 hour and 10 minutes. Time can vary but trust a wooden pick placed in center to come out clean and dry. Let cool and frost with the following frosting.
Maple Frosting
1 stick butter
1 cup packed light brown sugar
1/4 cup evaporated (NOT condensed)milk
2 cups appx confectioners sugar
1 tsp Mapleine flavoring
In a heavy saucepan melt the butter on medium heat. Watch closely and bring to a light brown color. Pour in the brown sugar. Stir with a wooden spoon until well blended and cook about two minutes till brown sugar no longer looks granulated. Carefully add the evap milk. It will sputter. Cook and stir until creamy looking appx another 2-3 minutes. Turn heat down to warm and add 1/2 cup XXXX sugar. Beat well over heat. Add another 1/2 cup and beat till smooth again. Add the last cup and beat till smooth again. If neccessary add a few drops of the evap milk. Add the mapleine flavoring. It should look like a penuche fudge. When you stop stirring you will see it hardening up. This is why you keep it on warm. If it hardens up too much just raise the heat a little. Pour this on top of the cake which you have taken out of the pan. Quickly sprinkle with the chopped nuts. If there is any frosting leftover, mix in some nuts, pour out on some waxed paper, and voila, maple walnut pralines!
