Pineapple cake tastes like pineapple upside-down cake
I just love this and really simple
13x9x2 baking dish,
350* for 45 min.-.
2 eggs-beat until light and fluffy
then add:
1 20 oz. can pineapple-undrained!
2 C. flour
1 C. white sugar
1 C. firmly packed brown sugar
2 t. baking soda
Mix these ingredients well in large bowl with a wooden spoon-no mixer.
add:
1 C. chopped walnuts
pour into prepared pan-greased and floured or sprayed with non-stick spray. bake at 350* for 45 to 50 minutes or until a toothpick inserted in the middle comes out clean.
Ginger Cream Cheese frosting
8 OZ. Cream cheese softened
2 T. butter
1 t. vanilla
1 lb. (usually 3 cups) powdered sugar-sifted
1 t. candied ginger chopped fine
1/2 t. dry ginger
OR 1 t. dry ginger
1/2 C. walnuts
combine all except candied ginger and with mixer beat until smooth add ginger and frost cake sprinkle with additional nuts if desired
