    Scandinavian Almond Cake

    This Scandinavian Almond Cake recipe was shared with me from my husband's cousin whose mom was of Swedish ancestory. It is not called a pound cake but is very much the same consistancy. The cake is positively out of this world. She and I both use the 10"x4-1/2" loaf pan.

    Spray a 10"X4-1/2" loaf pan or a Rehrukenform halfround loaf pan with cooking spray.

    Beat well:
    1-1/4 C. sugar
    1 egg
    1-1/2 tsp. pure almond extract
    2/3 C. milk

    Add:
    2/3 C. flour
    1/2 tsp. baking powder

    Add:
    1 stick melted margarine [MUST be margarine]
    Mix well.

    Bake at 350? for 40 - 50 minutes. Edges must be golden brown. Cool pan before removing. Cake will break if removed too soon. Sprinkle with confectionary sugar.

    VARIATION: Before pouring batter into the pan, sprinkle sliced almonds on the bottom of the pan.
