Suprisin' Carrot Cake

List of Ingredients
2 cups all-purpose flour
2 teaspoon baking soda
2 teaspoon cinnamon
1/2 teaspoon ginger
1/2 teaspoon salt
3 eggs
1 1/2 cup sugar
3/4 cup real mayonaise
1 8 oz. can crushed pineapple in juice undrained(or mandrin oranges)
2 cup coarsely chopped walnuts
Recipe
Grease and flour 2, 9" round cake pans or 13x9x2 pan. in a bowl stir together first 5 ingredients. Set aside. In a large bowl with mixer on med. speed beat next 4 ingredients until will blended. Gradually add in flour mixture until well mixed. then with a spoon stir in carrots and walnuts. turn into prepared pans and bake in 350* oven 30 to 35 min. best if not over baked use cake tester. cool in pans 10 min. then remove or leave in large pan and frost with whip cream or cool whip or cream cheese frosting that you have added 1/2 to 1 t. ginger to.-have recipe if needed.
