Chicken and Wild Rice Supreme

List of Ingredients
1 box Uncle Ben's Long Grain & Wild Rice (Original Recipe)
3 cups cooked, chopped chicken
1 can cream of celery soup
1 medium jar chopped pimientos, drained
1 onion, chopped (you might want to reduce to 1/2 an onion to be safe)
2 cans French-style green beans, drained
1 cup mayonnaise
1 can water chestnuts, drained and diced (optional--depends on whether or not you like the 'crunch' they add to texture)
1/2 tsp. salt
1 Tablespoon fresh lemon juice
2 cups grated Cheddar cheese
Recipe
Cook rice according to package directions. In a very large mixing bowl, combine rice with all other ingredients except cheese.
Pour into a lightly-greased 9x13" casserole dish. Sprinkle cheese evenly over top and bake at 350 degrees for about 45 minutes, until bubbly. Serve with a hot fruit dish or fruit salad and rolls for a wonderful meal!
