    Green Noodles with Ham and Cheese

    1 lb. spinach noodles
    1/2 lb. cooked ham, cur in julienne strips
    3 T. clarified butter
    1 T flour
    1 cup heavy cream
    1 cup Parmesan cheese
    paprika

    Recipe



    Boil noodles for 5-7 min. until al dente. Drain pasta and transfer to buttered 1 1/2 quart baking dish. Cover pasta with ham strips.
    In saucepan, melt butter, stir in flour and cook the roux over low heat, stirring for 2 min. Remove the pan from the heat, pour in cream and cook the sauce over moderate heat, stirring, for 5 min. until thickened. Stir in 3/4 cup Parmesan cheese and salt and pepper to taste. Pour the sauce over the ham and pasta. Sprinkle the dish with 1/4 cup Parmesan and paprika.
    Bake in preheated oven at 350 for 15 min until bubbling. Serves 4.
