    Spinach Lasagna

    List of Ingredients




    1 lb. very lean ground beef
    1 TBSP. salad oil
    1 tsp. salt
    1 tsp. pepper
    1 tsp. garlic powder
    1/2 lb. fresh mushrooms, sliced
    1 can (8 oz) tomato sauce
    8 oz. sour cream
    3/4 C. grated parmesan cheese, divided
    1 C. grated Longhorn cheese, divided
    1 yellow onion, finely chopped
    1 tsp. basil
    1 tsp. oregano, crushed
    8 oz. cottage cheese
    20 oz. frozen chopped spinach, thawed & drained

    Brown meat in oil, sprinkle on salt, pepper & garlic powder. Add onions & mushrooms & cook over low heat about 5 minutes stirring occasionally. Drain off any excess liquid. In large bowl combine the tomato sauce, sour cream, basil and oregano. Stir in the cottage cheese. Add all this to meat mixture. Put thawed spinach in colander & press out all the liquid. Add spinach to above. Add 1/2 C. parmesan and 1/2 C. Longhorn. Mix in. Put in greased 9 x 13" dish and cover top with remaining cheeses. Refrigerate if going to serve later. When ready, bake uncovered, at 350 degrees for 30 minutes or until hot through. Serves 5 to 6.
