    Crust:
    11 vanilla sandwich cream cookies, crushed
    3 tablespoons butter, melted

    Filling:

    3 (8oz) packages cream cheese, softened
    ¾ cup dark brown sugar
    5 teaspoons cornstarch
    ¾ teaspoon ground cinnamon
    3 eggs + 1 egg yolk
    2/3 cup pureed banana (2 small)
    3 tablespoons banana schnapps
    3 tablespoons light rum
    2 teaspoons vanilla extract

    Recipe



    Crust:
    In small bowl, mix cookie crumbs and butter until well blended. Press into bottom of greased 9-inch spring form pan. Set aside.

    Filling:
    In large bowl, combine cream cheese, brown sugar, cornstarch, and cinnamon. Beat with an electric mixer till smooth. Add eggs and egg yolk, one at a time, beating well after each addition. Beat in banana, schnapps, rum, and vanilla. Pour filling into prepared crust.

    Bake at 350 degrees for 15 minutes. Lower oven temperature to 225 degrees and bake 1 hour and 10 minutes or until the center no longer looks wet or shiny. Remove cake from oven and run knife around inside edge of pan to loosen cake from sides. Turn off oven
    and return cake to oven for additional 30 minutes.

    Cool to room temperature and then chill, uncovered, overnight.
