    List of Ingredients




    CRUST:
    ¼ cup butter
    1-¾ cup crushed gingersnaps

    FILLING:
    3 (8-oz.) packages cream cheese, softened
    ¼ cup packed brown sugar
    2 eggs
    2 tablespoon unsweetened cocoa powder
    2 teaspoon ground ginger
    2/3 cup whipping cream
    8 oz. semisweet chocolate, broken in pieces
    1/3 cup whiskey

    GARNISH:
    2 tablespoon unsweetened cocoa powder
    1 tablespoon powdered sugar + 1 teaspoon (additional) powdered sugar
    ½ teaspoon ground ginger

    Preheat oven to 350°.

    Crust:
    Melt butter in a small saucepan over low heat. Stir in crushed gingersnaps. Press mixture in bottom of a greased 8-inch spring-form pan. Set aside.

    Filling:
    Beat cream cheese, brown sugar, eggs, cocoa and ginger in a large bowl until smooth. Bring whipping cream to a boil in a small saucepan; remove from heat. Stir in chocolate until melted. Stir in whiskey; blend into cheese mixture. Spoon filling into prepared crust. Bake for 45 minutes or until set. Cool before removing from pan.
    Cut 5 strips of waxed paper 3/4-inch wide. Lay strips 3/4 inch apart on cheesecake.

    To garnish:
    Combine cocoa, icing sugar and ginger in a small bowl; sift over cake. Carefully remove strips.
    Makes 8 servings.
