    List of Ingredients




    5 eggs
    1 cup sugar
    ½ cup heavy cream
    1 lb. farmer's cheese
    ¼ cup cornstarch
    ½ teaspoon salt
    Grated rind of 1 lemon
    Fine bread crumbs

    Recipe



    Beat eggs with sugar until mixture is foamy. Blend in cream. Press cheese through a food mill or strainer. Combine cheese with egg mixture then add cornstarch, salt and lemon rind. Beat mixture thoroughly to make a smooth batter. Butter an 8-inch spring-form pan and coat lightly with fine breadcrumbs. Carefully pour in the cheese mixture. Bake at 300°F. for 1 to 1-1/4 hours, until it is lightly browned and shrinks from the pan. Remove sides of the pan and cool cheesecake on a wire rack. Sprinkle with cinnamon and sugar.
