    Crust:
    1 cup graham crackers crumbs
    3 tablespoons sugar
    3 tablespoons butter, melted

    Filling:
    2 (8oz) packages cream cheese, softened
    ½ cup sugar
    1 tbsp fresh lemon juice (optional)
    1 teaspoon grated lemon peel (optional)
    ½ teaspoon vanilla
    2 eggs, separated (beat whites to stiff peak stage)

    Topping:
    1 cup sour cream
    2 tablespoons sugar
    1 teaspoon vanilla

    Recipe



    Crust:
    Mix crumbs, sugar and butter with fork; press onto bottom of 9” spring form pan. Bake 10 minutes in 325-degree oven.

    Filling:
    Reduce oven temperature to 300degrees. Beat cream cheese, sugar, juice, peel and vanilla at medium speed with electric mixer until well blended. Add egg yolks, 1 at a time, mixing at low speed after each addition, just until blended. Fold in stiffly beaten egg whites; pour over crust. Bake 45 minutes or until center is almost set.

    Topping:
    Mix sour cream, sugar and vanilla. Carefully spread over cheesecake; continue baking 10 minutes. Run knife around rim of pan to loosen cake. Cool to room temperature and then chill 4 hours or overnight.

    Best topped with your favorite fruit!
