    Chocolate Marshmallow Cookies 2

    List of Ingredients

    1/2 cup (1 stick) butter or margarine, softened
    1 cup granulated sugar
    1 large egg
    1/4 cup milk
    1 tsp pure vanilla extract
    1-3/4 cups all purpose flour
    1/3 cup unsweetened cocoa powder
    1/2 tsp EACH: baking soda & salt
    16 large marshmallows

    ICING:
    6 tablespoons butter or margarine
    2 tablespoons unsweetened cocoa powder
    1/4 cup milk
    1-3/4 cups confectioners' sugar
    1/2 tsp pure vanilla extract

    Recipe

    Cookie:
    Heat oven to 350F. Ungreased cookie sheets. In mixing bowl, cream butter & sugar. Add egg, milk & vanilla; mix well. Combine flour, cocoa, baking soda & salt; beat into creamed mixture. Drop by rounded teaspoonfuls onto ungreased cookie sheets. Bake 8 minutes at 350F. Meanwhile - Cut marshmallows in 1/2. Press marshmallow 1/2, cut side down, onto each cookie. Return to oven 2 minutes. Cool completely on wire racks.

    Icing:
    In saucepan, combine butter, cocoa & milk. Bring to a boil; boil 1 min, stirring constantly. Cool slightly; transfer to small mixing bowl. Add confectioners' sugar & vanilla; beat well. Spread over cooled cookies. Top each with pecan 1/2, if desired.
