Betty Hearnes, former first lady of our first two term Missouri governor, is a great cook. Here are some of her recipes.
4 eggs
1 cup oleo
2 cups sugar
1 cup pecans
1 1/2 cups all purpose flour
1/3 cup cocoa
1/8 tsp. salt
Miniature marshmallows
Melt oleo and cocoa together. Pour into bowl containing all the ingredients except pecans and marshmallows. Beat well; add nuts. Spread on large baking sheet (11 x 16 inches) with sides. Bake 10 to 15 minutes at 350 degrees. When baked, cover top with miniature marshmallows and return to oven until they soften. Have icing ready and spread over marshmallows on warm cake.
Icing
1/2 stick oleo-melted
1/3 cup milk
1/3 cup cocoa
1 tsp. vanilla extract
1 box sifted powdered sugar
Mix all ingredients well.
