    1 3/4 cups flour
    1 1/2 tsp. baking powder
    1/2 tsp. salt
    1/4 tsp. ground cinnamon
    1/4 tsp. ground ginger
    1/4 tsp. ground cardamom
    1/4 tsp. ground coriander
    1 cup sugar
    1/2 cup dried apricots, chopped
    15-oz. can pumpkin purèe
    3 T. water, 3 T. oil, 2 tsp. baking powder, mixed together
    1/3 cup orange juice
    1 tsp. orange peel

    Preheat oven to 350 degrees. Lightly grease and flour a 9-inch loaf pan. Set aside. In a large bowl, combine flour, baking powder, salt, cinnamon, ginger, cardamom, coriander, sugar, and apricots. Mix thoroughly. Set aside. In another bowl, whisk together pumpkin puree; water, oil, and baking powder mixture; orange juice; and orange peel. Pour pumpkin mixture into dry ingredients. Stir until batter is well blended.
    Pour batter into prepared loaf pan and bake 55 to 60 minutes, or until toothpick inserted into the center comes out clean.
