a favorite with my children's grade school teachers at Vogt School in Ferguson. Once or twice a month I would deliver this [recipe doubled] to the teachers lounge as I dropped off kids. In 1981 our beloved Vogt school, originally the High school was closed, my DD had just completed 1st grade...the happy ending is 5 yrs ago, Vogt was re-opened as lots of young families settled in the neighborhood. My granddaughter Leslie now attends Vogt...
I vary the fruits, if doubling use two pans..
Easy Fruit Kuchen
Preheat oven to 350 degrees.. Cut:
1/2 cup margarine into:
1 large pkg. yellow cake mix
Add:
1/2 cup flaked coconut
Pat into ungreased 9x13x2 pan make a slight edge up the sides. Bake 10 minutes Arrange:
2 1/2 to 3 cups sliced fresh or drained canned fruit on top of crust..
Mix:
1 tsp cinnamon
1/2 cup sugar
grating of nutmeg and sprinkle over the fruit
In a small bowl mix:
1 c sour cream
1 large egg. Drizzle over fruit...
Bake 25 minutes or until edges or light brown...do not overbake...serve warm.. I have baked the crusts the night before, wrapped tightly in the pan and continued in the morning...sometimes keep zip lock bags of the crust mix in the freezer for a fast start. This is delicious with fresh peaches... Try Chocolate cake mix with fresh pears...
