    Apricot Dreams

    Friends
    for crust:
    1 cup flour
    1 tsp baking powder
    1/8 tsp salt..
    stir together and add..
    1 egg, beaten,1/2 cup unsalted butter, softened
    1 Tab whole milk..
    beat until well blended..

    pat dough into a jelly roll pan [10x15 inches]
    spread 12 oz apricot jam on top of dough

    for topping
    1 egg, beaten
    2 Tab melted butter
    1/2 cup chopped nuts
    [unsalted walnuts, pecans, cashews, pistachios]
    1/4 cup sugar
    mix in small bowl..
    distribute over jam..
    bake 25 minutes in pre-heated 325 degree oven. Bake on the middle rack. Let cool slightly then cut into diamonds or squares....

    refrigerate for as long as 3 days or freeze for a couple of weeks. If freezing ,wrap well and allow to sit at room temperature about an hour or so before serving..

    any fruit jam could be substituted. Plum jam would be excellent. Or even cranberry jam. Experiment!!
