Bennigan's Broccoli Bites

List of Ingredients




3 beaten eggs
1 1/2 cups shredded Monterey jack cheese
1 1/2 cups shredded colby cheese
16 ounces frozen chopped broccoli
thaw, drain and dry
2 1/2 ounces bacon pieces
1/2 ounce diced onion
1 ounce flour
bread crumbs as needed

HONEY DRESSING:
3/4 cup sour cream
1/3 cup mayonnaise
1/3 cup dijon mustard
1/3 cup honey
1 tablespoon lemon juice


Recipe



Place all ingredients (except bread crumbs) in a plastic bowl, stir until thoroughly combined. Refrigerate 1 hour. Heat about 4 cups oil in a fryer or deep pan, to 350ºF. pour bread crumbs into pie plate. Scoop about 1/2 oz portion for each, form into ball, coat with bread crumbs well. Fry for 1 minute; drain on paper towels. Serve with honey mustard dressing. In a bowl combine sour cream, mayonnaise and mustard. Using a whisk, slowly pour in the honey and lemon juice, continue mixing until smooth.
