Chocolate Pecan Caramel

1 tablespoon + 1 cup butter, no substitutions, softened
1½ cup coarsely chopped pecans, toasted
6oz semi sweet chocolate chips
2 cups packed brown sugar
1 cup light brown sugar
¼ cup water
14oz can sweetened condensed milk
2 teaspoon vanilla extract
Recipe
Line a 13x9x2” baking pan with foil; butter the foil with 1 tablespoon butter. Sprinkle nuts and chips; set aside. In a heavy saucepan over medium heat, melt remaining butter. Add brown sugar, syrup and water. Cook and stir until mixture comes to a boil. Stir in milk. Cook, stirring constantly, until candy thermometer reads 248 degrees (firm ball stage). Pour into pan (do not scrape). Cool completely
