1 cup cold butter
2 cups all-purpose flour
8oz package softened cream cheese
1 cup confectioners’ sugar
8oz carton cool whip, divided, thawed
3 cups cold milk
2-3.4 oz packages instant lemon pudding mix
Recipe
In a bowl, cut butter into the flour until crumbly. Press into an ungreased 13x9x2” baking pan. Bake at 350 degrees for 18-22 minutes or until set. Cool on a wire rack. In a mixing bowl, beat cheese and sugar until smooth. Fold in 1 cup cool whip. Spread over crust. In a mixing bowl, beat milk and pudding on low speed for 2 minutes. Carefully spread over cheese layer. Top with remaining cool whip. Refrigerate for at least 1 hour.
