    Merb's Red Cinnamon Candy Apples

    Merb's Candies, located in South St. Louis, is one of the oldest candy stores in the St. Louis area. They are famous this time of year for their HUGE taffy apples studded all over with chopped pecans -- a TDF treat! Normally, they run $3.49 EACH -- but last week they were on special at the Dierberg's Stores for $2.50 each (and you-know-who got six of them).

    List of Ingredients

    10 small apples (Red delicious or Jonathon)
    2 C. granulated sugar
    1 C. light corn syrup
    1/2 C. water
    1 Tablespoon. butter
    1/4 tsp. salt
    1/2 tsp. cinnamon
    Red food coloring


    Recipe

    Wash and dry apples; remove stems. Insert wooden skewers into stem end of each apple; set aside. In 4-quart saucepan combine sugar, corn syrup and water. Cook over medium heat to 290 degrees F. on candy thermometer. Stir in butter, salt, and cinnamon. Continue cooking to 300 degrees F. Remove pan from heat; cool. Stir in small amount red food color. Dip each apple into syrup, twirling apple and allowing excess syrup to drip. If syrup becomes too thick, reheat over low heat a few seconds. Place coated apples on greased baking sheet. Store by wrapping individually in plastic wrap. Makes 10 candy apples.
