Greek: Baklava With Almonds

Recipe Introduction
Here is the recipy for baklava with almonds. It is my grandmothers recipy and originates from Lesvos, the island she came from. Traditional treat for weddings since almond symbolizes fertility.
List of Ingredients
1 kg phyllo pastry
1/2 kg butter
Filling:
6 cups finelly chopped almonds
8 tbs sugar
3-4 tbs rose water all mixed together
For the syrup:
8 cups sugar
4 cups water
1/2 lemon juice
2-3 tbs rose waterRecipe
It is pretty much the same(as the recipe for Baklava with Walnuts) only here we put 5 sheets at the bottom, again 2 sheets-filling and finish with 5 sheets each one of them coated with clarified butter. Cut again into pieces and sprinkle with water and the rose water and bake at 180c for 30min and then at 120c for 3hours. Boil all the syrop ingedients for 5-7min and let it cool compeletely. When the baklava comes out pour the cold syrop and again let it stay for a whole day. The taste of this baklava is more delicate but i prefer the walnut one mushelf. I hope you enjoy them both.
