    Greek: Basic White Bread

    Hello everyone, my name is Despina and I am from Athens, Greece

    learned this recipe about 10 years ago in Orestiada (northern Greece near the Greek - Turkish borders). A nice old lady made this wonderful bread every day and she shared her recipe with me. I bake bread at least once a week and it is very easy to make.

    List of Ingredients




    1 kg strong white flour ( you can use 800 gr white flour and 200 gr whole wheat flour)
    27 gr dry yeast powder (3 packets) or 90 gr fresh yeast
    1/2 ltr warm water or milk or a mix of both
    3 Tbs sugar or honey
    1 tsp salt or to taste
    3-4 Tbs vegetable oil or margarine

    If you are using fresh yeast you should disolve it in a bowl with a little of the warm water add the sugar and let it foam (get angry as we say in Greece) for a minute or two. Then you can add the remaining ingredients.

    If you are using dry yeast you do not need to disolve it in water, you just add it to the flour.

    Mix all the ingredients together in a bowl and knead them for about 10 mins. The more you knead the bread the better it gets. The dough must not stick in your hands, and you should be able to form it into a ball. Cover the dough with plastic wrap in the bowl and let stand in a warm spot in the kitchen until it doubles in size (about 1 - 1 1/2 hour). If you are in a hurry you can put the dough in the oven, turn the heat to 50 degrees Celcius and it will double in about 30 minutes.

    After the rise, remove plastic wrap from the dough, springle a little flour in the bowl and knead again for about 5 minutes. Cut the dough in pieces (I usually cut it in 2 or 3) shape it like a loaf and put it in a baking pan covered with parchment paper and sprinled with a little flower. You can brush a mixture of egg and water over the loaves and sprinkle with sesame seeds, or poppy seeds if you like, or just cover the loaves with a little flour and make medium size cuts with a knife on top of them for a more country looking bread (the deeper the cuts the more crust the breads will have).

    Preheat the oven at about 180 degrees Celcius. Bake the bread for about 45-60 mins - until done).

    You can use this bread mix to make varius kinds of bread. You can add chopped black olives, grated parmesan cheese and chopped onions, crumbled feta cheese or anything you like.

    You can also add some golden raisins and sprinkle the bread with a mixture of sugar and cinammon for a sweeter taste.
