    Greek: Chicken w/ Feta and Olives

    1 kg chicken breasts
    2 cups olives
    500 gr shallots
    1 clove of garlic
    2-3 cups tomato juice
    300 gr feta cheese crumbled
    1/3 cup olive oil
    salt and pepper

    Recipe



    Put the oil in a pot and add the chicken. Cook until golden. Remove it and add the shallots. Cook them also until golden too. Put afain the chicken but make sure that the shallots are on top. Pour the tomato juice and the garlic. Cook until the chicken is tender. If the liquid reduces you can add some hot water. When almost done about 10 min. before, add the olives. When you turn off the heat add the feta and leave it for 1/2hour until the feta has melted and the flavours blend. Season with salt and freshly grounded pepper. Be careful with the salt as the olives and feta will give the salty flavour. Enjoy!
