    And here is the recipy for another famous Greek dish

    List of Ingredients




    11/2kg tender meat with plenty of fat(lamb,pork,veal)in bite-sized pieces
    salt
    pepper
    oregano
    thyme
    a little olive oil
    small wooden skewers
    2 onions thinly sliced
    2 tomatoes thinly sliced
    salt and pepper
    6-8 pitta breads
    1/4 cup oil
    a little oregano

    Place the meat pieces in a bowl.Sprikle with pepper,oregano and thyme. Drizzle with a little olive oil,stir,cover and let it stand in the refrigerator for a few hours or overnight. Fill each skewer with 4-5 pieces of meat.If the meat is fat-free, thread thin slices of lard between the meat pieces. This will render the souvlaki tastier and more tender.Just before grilling, brush with olive oil and sprinkle with extra freshly grounded pepper,oregano and thyme.Cook the souvlaki over charcoal or on a grill. Turn occasionally to cook on all sides. Do not overcook, otherwise the the souvlaki will be tough and dry.Sprinkle with salt when cooked, just before serving otherwise they will dry out.Salt absorbes liquids and dries out meat. Serve the souvlaki as soon as they come out of the heat, wrapping them in warm pitta bread,with onion, tomato slices,tzatziki and or musard. To prepare the pitta bread, mix the oil with the herbs and brush the pitta with the mixture. Cook on both sides on a grill until well heated
