    8 big eggplants
    1/2 kg ground beef
    2 fresh ripe tomatoes
    1 large onion
    2 pieces of garlic
    1 stick cinnamon
    Dashes of paprika and chillie
    3/4cup butter
    1/3 cup flour
    6 cups milk
    2 egg yolks
    Salt,pepper,nutmeg according to taste

    PREPARATION. Slice the eggplants and put them in water with salt and leave them for half an hour. Meanwhile prepare the meat. In 6 tbs olive oil put the onion sligtly chopped and garlic until golden. Add the meat and stir until no water is left. Pour in the tomatoes mushed .Put the cinnamon stick and season with paprika and chillie, salt and pepper. Ialso add 1 tbs of sugar. Cook until the liquid is reduced to minimum. Set aside. Drain the eggplants and the traditional way is to fry them in olive oil. I personally prefer to put them in the oven medium heat with a little oil until tender. In a medium bake pan put 3/4 of the eggplants in 2 layers. Evenly spread the meat mixture.Put the remaining eggplants on top in 1 layer. Prepare the sauce. In a saucepan melt the butter and add the flour. Stirring consantly until golden brown. Add the milk slowly and cook until it thickens.When it is slightly cooled put the eggs one at the time stirring constantly. Season with salt,pepper and nutmeg.Spread over the eggplants. Put it in medium heat oven until the top is golden brown. 40 min. approximately. It is served in room temperature so you can prepare it hours ago
