Greek: Piroski Dough

Recipe Introduction
This dough is slightly sweet and is a favourite among Greek people and especially children. You can use any kind of stuffing you like. Most common are mashed potatoes, coctail sausages, mushrooms with herbs, cheese and cooked ground meat.

130 gr. butter
50 gr. fresh yeast
40 gr. sugar
10 gr. salt
2 eggs
400 ml fresh milk (warm)
750 gr. flour (shifted)
10 gr. baking powder
Recipe
In a large bowl disolve the yeast with the warm milk. Add the butter, sugar, eggs and mix until well blended. Add the salt, baking powder and flour shifted and knead the dough until it becomes elastic.
Cover the bowl with plastic wrap and a kitchen towel and let stand for about 1 hour.
You can use this dough to either make small pancakes or fill this dough with various fillings. Most common fillings are frankfurters, mashed potatoes, chopped mushrooms with herbs, cheese or you can fill them with whatever you like. Just add a little filling in the middle of a round piece of dough and roll the dough to close it.
Most common way of cooking the piroski is deep frying, but you can also bake them in the oven.
If you prefer the oven use an oiled baking dish and place the piroskis with some distance between them as they double in size. Slightly beat an egg and brush the piroskis just before baking them. Bake in moderate oven.
