Greek: Walnut / Almond Pie, Karydopita / Amygdalopita

Recipe Introduction
The dosage for this pie is really big, so I recommend you do half of it. Even if you do half it will be enough for 12-15 servings.
List of Ingredients
400 gr sugar
400 gr self raising flour
2 tsp baking powder
320 gr corn oil or butter
500 gr. ground walnuts or ground almonds
14 eggs
1 tsp salt
If you use walnuts:
1 Tbs ground cinnamon
1 tsp ground cloves
ground zest of 1 orange
2 tsp vanilla extract
If you use almonds:
1 tsp vanilla extract
1 tsp almond extract
ground zest of 1-2 lemons
Syrup
1 kg water
1 kg sugar
juice of 1 lemon
vanilla extract
Recipe
Grease a rectangular or round pan and preheat oven to 180 degrees C (moderate oven).
In a large bowl beat together sugar, butter, eggs, zest, vanilla and remaining flavourings of your choice, until well combined and foamy. Add the flour, baking powder and salt and continue to beat. Add the ground nuts and beat on low speed for 1 minute. Pour mixture into pan.
Bake for 30-50 minutes or until a toothpick inserted in center comes out clean.
Let the cake cool completely in the pan.
Make the syrup: In a pan boil together sugar, water, lemon juice and vanilla extract for 1-2 minutes. Keep the syrup warm (not hot).
When the cake is completely cool pour the warm syrup over it and let the cake absorb it.
Serve as it is or with some whipped cream or ice cream.
