Mozambique: Frango a Portuguesa (Chicken the Portuguese Way)

In an electric skillet (or large saute pan):
Brown: 3 2 1/2-lb. CHICKENS, cut up in small pieces and seasoned with salt and pepper, in
4 to 6 oz. BUTTER, on all sides.
Remove pieces of chicken as they brown.
Add: 1 cup ONION, chopped finely and
1 clove GARLIC, minced finely and cook until onions soften.
Blend in 2 Tbs. FLOUR.
Add: 2 cups CANNED WHOLE TOMATOES, broken up by hand
1/4 cup SHERRY
1 Tbs. SALT
1 tsp. CRUSHED RED PEPPER.
Simmer covered for 45 minutes.
Serve over rice (in Portugal mashed potatoes take the place of rice).
