    Apple: Apple Nut Coffeecake

    Suzanne CorbettSt. Louis, Missouri Preheat oven to 350 degrees. In a large bowl beat:

    2 eggs light and lemon colored
    slowly add:

    1 1/2 cups sugar and beat 3 minutes..

    Sift together:
    1 cup flour
    2 tsp. baking powder
    1 tsp salt

    Fold into egg mixture. Add:
    2 cups chopped apples
    1 cup chopped nuts
    2 tsp vanilla.
    spoon into a buttered 8 inch square pan. Bake 25 to 35 minutes. Serve warm with whipped cream..
