Apples: Fried Apples

They go great with spare ribs, pork chops or ham. Sometimes I layer them over mashed sweet potatoes.
I use Fuji's
Peel and core the apples, slice thin
(I have a peeler/corer and can do 5 pounds in a few minutes)
Put a nice fat blob of butter in a large skillet, let it melt over moderate heat covering the bottom of the skillet
Add the apples, gently turn apples to coat with butter. Sprinkle lightly with sugar and cinnamon. Let cook until lightly brown on bottom. Gently turn and lightly brown on the other side.
