    Apricot: Ginger Apricot Cookies

    3/4 cup butter, slightly softened
    2 cups sugar
    beat together until light and fluffy. Add..
    2 eggs, beaten
    1/2 cup unsulphured molasses
    2 tsp white vinegar
    1 Tab finely grated fresh ginger. Just until mixed..

    sift together in a bowl
    3 3/4 cups flour
    1 1/2 tsp baking soda
    3/4 tsp ground cloves
    add to others and stir just enough to blend well..
    fold in 12 oz [1 1/2 cups chopped, dried apricots..
    drop by rounded spoonfuls [about 2 Tab.]...2" apart on baking sheets lined with parchment paper..
    bake 18 to 20 minutes. Slide parchment paper off baking sheet. Let cookies cool on parchment paper. Makes about 3 dozen 3" cookies.
