    Mother's Day: Berries and Cream Crepes

    List of Ingredients




    2 cups fresh mixed berries
    2 tablespoons sugar
    1/2 lemon
    1/2 cup sour cream
    4 crepes
    Berry Coulis, recipe follows

    Recipe



    In a bowl combine berries, sugar and a squirt of lemon. Toss to combine. Spread 2 tablespoons sour cream over crepe. Top with 1/4 of the berry mixture. Fold into quarters and serve with berry coulis. Repeat with remaining ingredients.

    Berry coulis:
    2 cups frozen berries (thawed)
    2 tablespoons sugar
    2 teaspoons lemon juice
    2 tablespoons rum, brandy, or Chambord

    In a blender, combine all ingredients. Process until smooth. Pour through a fine-meshed sieve to remove the seeds and refrigerate until ready to serve. Yield: approximately 2 cups
