Spread: Cranberry Orange Relish

8 cups fresh cranberries, washed and picked over
(2 lbs.)
4 cups sugar
1 1/2 cups water
2 tsp. grated orange peel
1 1/2 cups orange juice
1/2 cup slivered almonds, optional
Recipe
In a 6 to 8 quart pot, mix cranberries, sugar, water, orange peel and orange juice. Bring to boiling. Cook, uncovered, till cranberry skins pop, about 5-7 min., stirring once or twice. Stir in almonds, if desired. Remove from heat. Ladle hot relish into clean, hot, half pint jars leaving 1/2 inch head space. Adjust lids. Process in boiling water bath about 5 minutes. (Start timing when water returns to a boil). Makes 8 half pints.
