    Momer's Skillet Peach Preserves

    Peel and dice:
    8 ripe peaches (should measure about 6 cups)

    Put into a large skillet and add:
    an equal amount of granulated sugar
    1/4 cup fresh lemon juice.
    Mix and heat SLOWLY to boiling point, keep stirring. Let boil over medium heat 10 minutes[ keep stirring, with a wooden spoon] until it is thick. Add:
    1/3 to 1/2 cup cut up maraschino cherries..
    Remove from heat and let stand in skillet overnight. I just throw a clean linen towel over the top and let sit on the counter. Occasionally stirring so fruit absorbs the syrup and plumps up.... the next morning you can spoon into sterilized jelly glasses, cover with hot paraffin, then with lids.. the secret is small batches...sometimes I add drained crushed pineapple instead of cherries. And now I just bag in Freezer zip locks or even labeled 6 or 8 oz yogurt or creamed cheese containers and freeze rather than jar up...
