    The Best Strawberry Jam on The Face of The Earth

    Recipe Introduction

    Don't remember just where I got this recipe from, but it works and tastes good. Making microwave jam is brilliant when you have a small amount of fruit that needs using. You can make a perfect jar of jam all while you're washing the dishes or mopping the floor. But PLEASE do not be tempted to double or triple or otherwise increase this recipe in any way. This would increase cooking time and thus would destroy the remarkably fresh flavor of this superb jam.

    List of Ingredients

    2 cups strawberries
    1 1/2 cups sugar
    3 tbsp. lemon juice, OR 1 1/2 tsp. citric acid


    Recipe

    1. Place all ingredients in your largest microwave container. Cut extra-large berries in half, otherwise leave them whole.
    2. Microwave on HIGH for 5 min. Stir to dissolve sugar. Microwave on HIGH for another 10 min., stirring occasionally. Test for set (see below). If setting point hasn't been reached, give it another 2 min. burst. Do not overcook. Allow to cool for about 10 min. This will ensure that the fruit stays evenly distributed through the jam, rather than floating to the top. Pour into two small, (or one medium) hot, sterilized jars (see below), and seal.

    This recipe serves: 2 small jars, 1 medium jar.

    Notes about this recipe:

    TO TEST FOR SET: Keep a saucer in freezer while jam cooks. When ready to set, place a small blob of jam on the saucer, and cool completely. If it wrinkles when pushed with a finger, it's ready.

    TO STERILIZE JARS IN THE MICROWAVE: Pour water into a jar to a depth of 1/2". Microwave on HIGH for 2 min. Pour off water, and set on a kitchen towel for just a few moments until dry inside. Pour in jam while jar is still hot.
