    Recipe Introduction

surrounded by trees ,was a stagecoach stop 20 miles west of the Mississippi Riverfront of downtown St. Louis. By the 1890's residents were making the long trek just for the food.....more than a century later, suburbs surround the plain white clapboard restaurant. The menu includes traditional classics...prime rib, Chicken Marsala, fresh seafood. Inside the ambience is comfortable with fireplace, and rich colors...generations of families have eaten ribs in the screened log "cabins" outside on summer evenings....why have they endured so long?...according to one of the owners ,Carl Coles " History and tradition are important, but good food and service come first"....... 1/2 cup olive oil
    1/2 cup soy sauce
    1 Tab fresh lemon juice
    1 Tab liquid smoke
    1 Tab white vinegar
mix in a small bowl, set aside

2 slabs, about 2 lbs each, of baby back pork ribs,

    bbq sauce as side bowl

In a covered grill, arrange medium hot coals in a drip pan. Should be able to hold your hand over the coals at food height for 4 seconds.. put ribs on grill rack but not over coals, brush with basting sauce...lower hood.... grill 1 hr. until slabs are well done. Turn and baste every 15 minutes
can baste with your favorite BBQ sauce the last few minutes...serves 4
