    2 lbs lean ground beef
    1/2 cup tomato ketchup
    1/3 cup tomato juice
    3 tsp prepared mustard
    1/2 tsp each of salt and pepper
    1/8 tsp each of spicy seasoning and garlic powder
    2 eggs, beaten
    1 cup quick cooking oats
    1/4 cup onions, finely chopped

    Topping:
    1/3 cup tomato ketchup
    1/4 cup tomato juice
    1 tsp prepared mustard
    3 tsp brown sugar
    Fresh or dried herbs, for garnish, (optional)

    Recipe



    1. Preheat oven to 400*F
    2. In large bowl, combine ketchup, tomato juice, mustard, salt, pepper, spicy seasoning, garlic powder, oats, onion and eggs. Mix until well blended.
    3. Add ground beef. Mix until well blended. (I like to wash my hands then mix these ingredients with my hands, gets all mixed well. You want to mix until no juice is left standing and no chuncks of meat left without being seasoned.)
    4. Line a 9x5 loaf pan with foil. Press in the beef mixture.
    5. In a seperate bowl, combine the topping ingredients, mix well. Spread topping over the meat loaf.
    6. Bake for 45 minutes or until no meat is red.
    7. Tilt pan to drain out fat (I use a turkey baster.) Rest meat loaf 5 minutes before serving. Garnish with fresh herbs if desired.

    Serve with fresh salad and garlic bread; makes it even more wonderful.
