Recipe Introduction
I came up with this recipe after reading three different ones, I liked parts of them, but not the whole ones. So I creatively came up with this:
*For better flavor, grill steak before cutting.
List of Ingredients
1 tbsp. olive oil
garlic cooking spray
12oz. sirloin steak, 1/2-3/4 inch thick
1 medium zucchini, cut into 1 inch pieces
2 cups (12oz) halved cherry tomatoes or whole grape tomatoes
1/3 cup pitted, coarsely chopped black Mediterrean Olives
1 medium (or 2 small) yellow squash, cut into 1 inch pieces
1 1/2-2 cups julienned carrots
1 cup rice
1 can beef consumme
1 can French Onion Soup
1 stick butter or margarine, melted
Recipe
Mix butter, rice, consumme and soup. Pour mixture in a 13x9 inch pan and cover with tin foil. Bake in a preheated 350 oven for 1 hour or til done. In the meanwhile, heat olive oil in a large non-stick skillet over medium heat. Add zucchini, squash, and carrots . Cook stirring occasionally, 6 minutes or til lightly browned. Add tomatoes and olives; cook, stirring occasionally, 2 minutes or til tomatoes are hot but not collasped. Season with 1/4 tsp. each salt, fresh ground peppercorn and Mrs. Dash. Remove from heat.
* Cut meat into 1-2 inch chunks. Coat meat with garlic spray. Heat over medium-high heat til desired doneness (med.rare, med., well done, rare..)
When rice is done, remove to serving dish. Top with veggies and meat. Serve warm with rolls.
