    2 cups bran flakes
    1 cup milk
    1-1/2 cups self-rising flour
    2 tablespoons sugar
    1 teaspoon ground cinnamon
    2 eggs, lightly beaten
    1/2 cup applesauce
    3 tablespoons vegetable oil
    1 teaspoon vanilla extract
    1/2 cup chopped pecans

    Recipe



    Preheat oven to 400°F. Spray 12 muffin cups with non-stick vegetable spray.
    In a large mixing bowl, combine bran flakes and milk; let stand for 5 minutes.
    In a medium bowl, combine flour, sugar, and cinnamon; set aside.
    Add eggs, applesauce, oil, and vanilla to bran flakes; beat until well blended. Stir in flour mixture and pecans until just moistened. Fill muffin cups 3/4 full.
    Bake 25 to 30 minutes or until lightly browned and tops spring back when lightly touched. Remove from muffin cups; cool on a wire rack.
